What better meal is there than breakfast really? Let’s be honest, breakfast foods are really good for breakfast, lunch, dinner, snacks, you name it lol. So today I am sharing three simple vegan breakfast recipes for winter that are perfect whether you have a bit of time in the morning or are in a complete rush.
If you’re in the mood for something comforting, sweet, nutritious, or just downright delicious, I’ve got you covered. I hope you enjoy these three (well four really!) easy and wholesome vegan breakfast recipes that will help you start your winter days with nourishment and an energetic boost as well.

And here we go; 3 Simple Vegan Breakfast Recipes for Winter
TOFU SCRAMBLE for protection, grounding, and confidence
Ingredients:
- 1 tbsp extra virgin olive oil
- 2 tsp minced garlic
- 1 pack medium tofu
- 3 tbsp nutritional yeast
- 1 tsp turmeric
- 1/2 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp sea salt
- 3 tbsp coconut milk
Steps:
- Heat your olive oil and garlic in the pan.
- Add your tofu and mash with a potato masher or fork.
- Mix in all of your spices and your milk.
- Stir well and sauté in the pan for 7 – 10 minutes until tofu is fully heated and not wet.
- Adjust spices to your tastes if necessary.
- Prior to eating state the following or something similar:
“May this dish be blessed and bring protection, grounding, and confidence to my inner self.”
CINNAMON QUINOA BOWL for Money, Abundance, and Success
Ingredients:
- 1/2 cup dry quinoa
- 1 cup plant milk
- 2 tsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/8 tsp sea salt
- optional toppings: banana, berries, nuts, nut butters, seeds, coconut
Steps:
- Rinse your quinoa and combine it with your choice of milk into a saucepan.
- Bring to a boil. Cover, turn down heat and allow to simmer for about 8 minutes.
- Stir in the rest of your ingredients and simmer for another 5 – 7 minutes until all liquid is absorbed.
- Stirring occasionally. As you stir, state the following or something similar:
‘May this quinoa bowl, nourishing gift from the earth, allow me to attract money, abundance, and success throughout the winter season.”
MOCHA OVERNIGHT OATS for Love, Wealth, and Clarity
Ingredients:
- 1/3 cup rolled oats
- 1/3 cup non-dairy milk
- 1/4 cup brewed coffee
- 1 tbsp ground flax seed
- 2 tbsp cacao powder
- 1/4 ceylon cinnamon powder
- 1/2 tsp vanilla extract or 1/2 scoop vanilla protein powder
- 1 tsp maple syrup (optional)
- Top with crushed nuts, vegan chocolate chips, berries, or bananas
Steps:
- Add all dry ingredients into an 8 ounce glass jar (mason jars work great).
- Stir until well mixed.
- Add in all wet ingredients. Once again, stir until well combined.
- Place on the lid and put into the fridge overnight or for at least 4 hours. These
- are perfect to meal prep the day before so they are ready for you in the morning.
- When you are ready to eat stir your oats clockwise and state the following or something similar:
‘May this meal assist in bringing love, wealth, and clarity to my mind, body, and soul.”
BONUS RECIPE!
CHOCOLATE HAZELNUT SMOOTHIE BOWL for Wisdom, Creativity, and Prosperity
Ingredients:
- 1/4 c non dairy milk
- 2 tbsp non dairy yogurt
- 2 bananas
- 1 tbsp hazelnut butter
- 1 tbsp cacao powder
- 1 scoop vegan chocolate protein powder
- top with banana slices, chocolate chips, hazelnut pieces, nut butter, granola
Steps:
- Add all ingredients to your blender (a high power one is recommended). Blend until smooth.
- Pour into a bowl and add your desired toppings. Some good ones include nuts, seeds, coconut, nut butter, chocolate chips, or more fresh fruit.
- While blending you may state the following or something similar:
“Nourishing foods, sweet gifts from the earth may you help to bring wisdom to my mind, creativity to life spirit, and prosperity to my life.”
