You can’t have the holidays without a little eggnog! It is most definitely a Yuletide staple! I’ve been having some fun lately using this tasty holiday beverage in my baking. And what better way to enjoy eating eggnog than in a deliciously tasty vegan eggnog muffin.
Yule is a magickal time filled with warmth, love, and joyful festivities. And these will be a perfect addition to your Yule morning breakfast or tea time treat. These eggnog muffins are simple to make, flavourful, and of course festive!
Yuletide Baking
Yule takes place on the Winter Solstice and is the shortest day of the year. This is a time of rest, rejuvenation, and rebirth within nature and within ourselves as well. Also a time where we can indulge a little more and just simply be and enjoy ourselves.
Yule is a big Sabbat for baking; cookies, cakes, gingerbread, and of course muffins shouldn’t be left out of the mix. Baking is an excellent way to feel cozy inside our homes, connect with our inner kitchen witch, and embrace the long nights that the winter holds. Not to mention, a wonderful way to share that festive holiday cheer.

So without further adieu, let’s get into this eggnog muffin recipe shall we.
Eggnog Muffins Main Magickal Properties
Food and feasting is always included in Sabbat festivities and is a huge part of Yule. Adding magical meals and baked goods into your celebrations will enrich your day, your rituals, and give you an excuse to cook up some creative and scrumptious offerings you may not normally be inclined to make.
All foods carry their own energies. Please find here some of the magical properties attached to our eggnog muffins:
Wheat – grounding, abundance, stability
Oats – sustainability, wealth
Cinnamon – success, prosperity, strength, luck, love, enhanced psychic awareness
Nutmeg – confidence, good luck, success, prosperity
Vanilla – love, beauty, passion
Flaxseed – healing, money, protection, beauty, psychic abilities
Brown Sugar – love, money, attraction, peace
Maple Syrup – love, wealth, joy, prosperity
Eggnog Muffin Recipe
Makes 10 – 12 Muffins – Total Time: 45 minutes
- 1 c. quick oats
- 1 c. vegan eggnog (I like Oatnog by Earth’s Own)
- 1 flax egg (1 tbsp ground flax mixed with 3 tbsps water) or egg replacer
- 1/4 c. maple syrup
- 2 tbsp. olive oil or coconut oil
- 1 1/2 tsp. vanilla extract
- 1/2 c. brown sugar
- 1 1/2 c. whole wheat or all purpose flour
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. Ceylon cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp sea salt
- 2 tbsp. holiday sprinkles for topping
Preparation
- Preheat oven to 350 and line or grease your muffin pan.
- Stir together oats and eggnog in a large bowl and allow to sit for 10 minutes.
- Then mix up your flax egg and set aside to thicken.
- After the 10 minutes, add in all wet ingredients and your flax egg into the eggnog oat mixture. Mix to combine.
- In a separate bowl mix together all dry ingredients.
- Now add your dry ingredients into the wet and stir until all ingredients are combined.
- Fill your muffin tins about 3/4 of the way full.
- Sprinkle your holiday candies/sprinkles on the tops of the muffins.
- Place your muffins in the oven and bake for 15 to 20 minutes (oven times will vary). Insert a toothpick into the centre and when it comes out clean you will know they are done. Mine were perfect in 18 minutes.
- Remove from oven and allow to cool for 5 minutes. Then place on wire rack to cool fully.
Enjoy for breakfast or serve with coffee/tea, top wth a little butter, and enjoy!
