Spring is an absolutely beautiful and vibrant time of year! Nature is blossoming to life all around and we are surrounded by abundance. It’s the perfect time of year to include this intention into your practice. And what better way than in the kitchen!
These bites also contain some other wonderful properties that are great for embracing spring time energy including stability, wealth, love, strength, luck, joy, and energy.
Lastly, we can’t forget that these peanut butter coconut bites are filled with nutrients and healthy fats. Let’s take a closer look at some of the health benefits.
Peanut Butter Coconut Bites: Health Benefits
Rolled Oats (the extra thick variety are particularly good)

Vegan Vanilla Protein Powder
- Many of us require a little bit of a protein boost into our days.
- I use Form Performance Protein Powder or Genuine Health Organic Fermented Vanilla Protein Powder. They are both delicious, vegan, and with no unpronounceable additives.
- A lot of protein powders unfortunately have many additives. Be sure to buy high quality if you are going to use one.
- Another alternative I like to use is pure Pumpkin Seed Powder. It comes unflavoured and is honestly pretty tasteless, so you don’t even notice it’s there lol.
Peanut Butter Coconut Bites: Main Magickal Properties
Peanut Butter – stability, abundance, wealth, love
Oats – sustainability, wealth, abundance
Coconut – luck, protection, purification
Cinnamon – success, prosperity, strength, luck, love, enhanced psychic awareness
Vanilla – love, beauty, passion, energy
Maple Syrup – love, wealth, joy, prosperity
While preparing your bites, focus on the intention of having abundance in your life. How do you want this to feel? What goals do you want to accomplish? Visualize how your life will look once you reach these milestones.
And Now The Peanut Butter Coconut Bites Recipe!
Makes 18 – 24 bites | Time: 15 minutes
Ingredients:
- 1 cup peanut butter
- 1⁄4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 cup old fashioned rolled oats
- 1 scoop Protein Powder (chocolate or vanilla)
- 1 tbsp coconut flour
- 1 tbsp shredded coconut (more for rolling, optional)
- 1 tbsp vegan mini chocolate chips
- 1⁄4 teaspoon Ceylon cinnamon
- 1/4 tsp sea salt
Preparation:
- Line a storage container with wax paper.
- Mix your peanut butter, maple syrup and vanilla extract until well combined.
- Now mix in all of your dry ingredients. The mix will be thick, so it will take a bit of effort to have it all come together. You may wish to mix with your hands for the last couple of minutes. This will create a deeper connection with the ingredients as well. If the mix is a little dry, add a dash of plant milk and if it is a tad too sticky add an additional sprinkle of flour. Peanut butters can have quite different consistencies. The dough should hold together easily but not be so wet it sticks to your hands.
- Use a tablespoon to scoop out the mixture and roll into balls. As you begin to scoop your energy bites, recite the following: ‘May this nourishing snack bring abundance to my day.’ You may repeat this each time you have one of these bites to re-assert the intentions. Feel free to tailor it to your situation.
- At this point, if you like, you may roll the bites in more shredded coconut to have a nice coconut coating.
- Place the energy bites in the container, give thanks to Mother Earth, and store in the refrigerator.
And that’s it!
Very easy to put together and really so tasty.
They will stay fresh up to 1 week, though I have eaten them for up to two weeks. They just tend to get more dry as the days pass. You may also freeze them up to 3 months.
